important thing about a cheese, its milk, comes
from our Happy Goats. Or maybe because it
contains no preservatives, colorings or flavor
enhancers and is therefore natural,
or maybe because Juani (the cheesemaker)
doesn't rest until she likes cheese.
I mean... exalted, champion...
It has a uniform texture, a mild taste and a
particular and intense smell. Its cut is the color of
our mountains in summer, with reddish tones
reminiscent of the sunset. At Tallante we
remember the sowing of spores of the mold native
to our mountains during the ripening process.
An award-winning young cheese that suits every
palate. Its taste moves us back to the days when
EVERYTHING was done with craftsmanship and
care. Or at least that is our true intention.

passion in this house. A cheese with personality,
specifically that of our first grandson and inspiration
for this Gourmet Cheese: Izan.
It is sweetly soft in texture and mild in flavor, with

with slight notes of fresh milk. Undoubtedly a special
detail loaded with craftsmanship and natural
ingredients.

After the alcoholic fermentation
French oak barrels where they remain for 6

TASTING NOTE:
The wine stands out for its intense fruity aroma.
On the palate it is fresh with a floral sensation and
a long finish. Well balanced.
CONSUMPTION RECOMMENDATIONS:
best enjoyed between 7ºC/9ºC. Suitable for vegans

or minors due to its alcohol content.
PAIRING:

ELABORATION:
Vinification is carried out in stainless steel thanks
to a period of 15 days, with a maximum
temperature of between 20ºC and 25ºC.
Once the maceration-fermentation process is
finished, it is stored in tanks until it is cleared and
stabilized for unbottling.

STORAGE CONDITIONS AND DURABILITY:
the recommended storage temperature is between

is a versatile coupage that combines
with success intensity and elegance
typical of the variety of Burgundian origin
with the structure and freshness of one of the
most cultivated white wines in our country.
Both varieties originate from a careful selection of
15-year-old vines that Bodegas Fontana cultivates
in Fuente de Pedro Naharro (Cuenca), at an
altitude between 700
and 900 meters above sea level.
Under the ownership of the Cantarero brothers
and directed by the Master of Wine, Andreas
Kubach,
